Green apple chicken salad sandwich with fresh greens

Hello and welcome! This is where I feed the Tor consensus to my roomates, friends, and loved ones :)

Today's Tor consensus-generated recipe name was almost too lucky, as one of the three words was an actual food item. This left us with the puzzle of how a salad can be rogue and what it means for this to be renewed. Since (chicken, tuna, chickpea) salad sandwiches are easy to make and portable, we decided that this interpretation of salad in a sandwich was the best food for mischief. And, it's finally spring here, so fresh (renewed) greens are starting to pop up from the ground. I used some spring mix from the store for the greens, but when I went outside, there was a layer of garlic mustard covering pretty much everything and this was delicious with the chicken salad as well.

The base salad can be anything that meets the dietary restrictions of your party. I used an apple chicken salad recipe that a friend taught me years ago that I'd like to share.

Ingredients: Instructions:
  1. Heat a pan with some cooking oil on the stovetop on medium heat.
  2. Cook the chicken, stirring frequently, until it is cooked through and lightly browned on all sides.
  3. Dice the apple into bitesize pieces and throw these into the pan to cook alongside the chicken for only about a minute before turning off the heat.
  4. Let the chicken and apple cool to room temperature before adding in the mayonnaise.
  5. Construct your sandwich by placing a layer of greens on the botton piece of bread and piling on a good serving of chicken apple salad.
Your sandwich is now ready to be wrapped up, thrown into your bag of holding, and used as sustenance for your adventures with friends.

Reception

My friends really liked this recipe. The green apples make the chicken salad tart and juicy. Next time for a veganized version I'm thinking of trying tempeh, green apple, and vegan yoghurt as the salad base.
